3 Family Friendly Meals for Babies/ Toddlers/ Kids - Easy to Bulk Make & Freeze!

Salmon & Spinach Lasagne

Ingredients:
2 salmon fillets (boneless)
Handful spinach - fresh frozen, tinned all work
Lasagne sheets (fresh or dried both work)
1 tbsp. unsalted butter
1 1/2 cups whole milk
Large handful grated mild cheddar cheese
A few slices of mozzarella (or any cheese of your choice)
1 tbsp. parmesan cheese (to top)
Black pepper, mixed dried herbs - optional

Cottage Pie

Ingredients:
3 - 4 large potatoes/ sweet potatoes
500g (1/2 kg) lean steak mince (or turkey/ chicken mince works too)
1/4 cup chopped onion
1/4 cup other chopped veggies (I used peas, carrots & green beans)
1 baby chicken stock cube
Small handful grated cheddar cheese (to top) - optional

Egg Muffins

Ingredients:
8- 12 large eggs (depending on the size of your muffin tin)
Filling of choice (I used a pre-based tuna steak & cooked chopped peas, carrots, green beans)
Grated cheddar (to top)
Black pepper, mixed herbs, garlic powder

This week I am sharing an amazingly easy but super tasty recipe for the ultimate healthy guilt free treat - if you are a fan of a Bounty but are trying to eat healthily then this is for you!




These coconut protein truffles use only raw ingredients and you can add some cacao powder for a chocolate hit without the guilt!




This is a no bake recipe - all you need is a food processor or strong blender.




Ingredients:
1 cup coconut meat
2 tbsp. coconut oil
1/2 cup nuts of your choice (I used a combo of macadamia & cashew, almonds would also be great)
1 tbsp raw honey
2 mejool dates

Splash vanilla essence (or 1/2 vanilla pod)
Optional - to make it chocolatey add 1-2 tbsp raw cacao powder
Desiccated coconut/ cacao powder for rolling




Whizz all of the ingredients in your food processor until they start to form a large sticky ball. I like to whizz up my nuts & coconut meat first to give them a head start then add everything else. Wet your hands slightly and roll the mixture into balls. Roll in desiccated coconut or cacao powder to finish.

Store these in the fridge for 3-4 hours to firm up then enjoy! Keep them in an air tight container in the fridge for 3-4 days or freeze them for 3-4 months. I always freeze them or else they would be gone within a day - they are that good!

Hi everyone! In this video I am sharing 10 easy food swaps to help you become healthier - these are all changes that I have made to my diet in the last couple of years and I have noticed improvements in my skin, in how I feel generally and I am a lot less bloated than I used to be.

1. Swap cows milk for almond milk (or soya, coconut)
2. Swap mayo for greek yogurt
3. Swap butter for mashed banana or avocado
4. Swap flour tortilla wraps for lettice wraps (or corn/buckwheat wraps)
5. Swap potato chips for apple chips, kale chips or sweet potato chips or make your own!
6. Swap potaotes for sweet potatoes
7. Swap refined sugars and chemical sweeteners for natural sweeteners (raw honey, pure maple syryp, agave nectar, stevia)
8. Swap jam for chia seed jame
9. Swap fizzy drinks for sparkling water with lemon/lime or coconut/aloe water
10. Swap pizza bases, mashed potato & rice for cauliflower varieties!

This week I am sharing healthy versions of one of my favourite things to make - microwave mug cakes! Get a guilt free treat in 2 minutes or less than tastes just like an indulgent dessert! These recipes have no refined sugar and no butter/oil so they are the perfect guilt free treat!



Ingredients & instructions:



APPLE PIE MUG CAKE


6 tbsp self raising flour
(or use all purpose/ buckwheat/ coconut with 1/2 tsp baking powder)
1 tbsp unsweetened appled sauce
1 tsp cinnamon
1 egg
2 tbsp milk
Splash vanilla essence
You could also add sultanas if you like.
Mix and add to your microwave for around 2 minutes - see indicatives timings below. Top with some 0% fat greek yogurt and more cinnamon and enjoy!



CHOCOLATE ORANGE MUG CAKE


4 tbsp self raising flour
(or use all purpose/buckwheat/coconut flour with 1 tsp baking powder)
2 tbsp cocoa powder (or 1 tbsp cacao powder, which is healthier and stronger in flavour)
1 egg (or 2 egg whites) or juice of orange
2 tbsp milk
1 tsp vanilla
Zest of 1 orange
Mix and add to your microwave for around 2 minutes - see indicatives timings below. Top with some 0% fat greek yogurt and more cocoa powder and orange zest and enjoy!



CRANBERRY COCONUT MUG CAKE


5 tbsp self raising flour
(or use all purpose/buckwheat/coconut flour with ½ tsp baking powder)
1 tbsp dessicated coconut
1 egg (or 2 egg whites)
2 tbsp milk
1 tsp vanilla
1 tbsp dried cranberries
Mix and add to your microwave for around 2 minutes - see indicatives timings below. Top with some pure maple syrup and more dried cranberries & coconut and enjoy!



Microwave guidelines:
The below timings are approximate - if your mug cake is 'chewy' or 'rubbery' then you are cooking it too long - try 30 second bursts and keep checking it.

1000w - 1 minute 30 seconds
800w - 2 minutes
600w - 2 minutes 20 seconds

Fresh Salsa & Homemade Tortilla Chips | Summer Sunshine Series





Welcome back to the Summer Sunshine Series where I am sharing a summer-inspired delicious and nutritious recipe with you every week!

In this video I am sharing a recipe that is so simple and tasty that I promise you will make it again and again. This fresh salsa is zesty, zingy and can be as hot as you like! Teamed with my paprika spiced tortilla chips these are a winning combination for your summer picnics and BBQs!

To make the salsa:
6 medium tomatoes
1/2 red onion
1 whole red chilli, deseeded and diced
Handful chopped fresh coriander (cilantro)
Juice of 1 lime
Salt & pepper to taste

Chop all ingredients and mix together - it's that easy! This is an amazing topping for salad, fish or chicken and is completely guilt free yet packed full of flavour!

For the tortilla chips:
Tortilla wrap of choice
Paprika, salt & cooking spray

Cut your tortilla wrap into 8 triangles and spread out on a baking sheet. Spray with cooking spray and sprinkle with paprika and sea salt. Oven bake for around 10 minutes at 180 degrees Celsius. Serve with the salsa and enjoy!

Spicy Chorizo & Olive Pasta | Healthy Dinner Idea | Summer Sunshine Series





Spicy Chorizo & Olive Pasta | Summer Sunshine Series



Today I am sharing with you another great summer recipe that is really delicious and easy to whip up when you have company! The spicy sauce is really versatile and goes very well with chicken, salmon or over zucchini noodles as well as with pasta. I have used brown rice pasta in this recipe but you can use whatever you prefer. You can also make this veggie by skipping the chorizo & pancetta and replacing these with mixed beans - just as delicious!



This recipe also freezes really well - just add a little water before reheating to loosen the sauce up a little. ENJOY!



To make the sauce you will need:
Onion, diced
Bell peppers, diced
Zucchini, chopped
Pancetta, diced
Chorizo, chopped
Olives
Herbs & spices of your choice - I used dried cilantro (coriander), parsely and plenty of hot paprika
Salt & pepper to taste
Chopped tomatoes



This is one of those recipes where anything goes and everytime I make it it's a little different - throw in whatever you have in your fridge! Try adding sub dried tomatoes or roasted peppers for more flavour - especially if you are skipped on the pancetta and chorizo.

Simmer away for at least 20-30 minutes - the longer this simmers the better it will taste!



This recipe is a great crowd pleaser and a fantastic way to sneak plenty of veggies in for those who don't eat enough!

Baked Oatmeal 4 Delicious Ways | Healthy Breakfast Idea | Summer Sunshine Series

I love oats in general but something really special happens when you bake them - especially when you add a few delicious ingredients to make breakfast something you look forward to in the morning! All of these recipes taste super indulgent but are free of refined sugar and entirely guilt free!

In this video I share 4 recipes - Caramel Apple baked oats; Chocolate macademia baked oats; Berry seedy baked oats and Coconut cashew baked oatmeal. These take on an almost cake-like texture and are my current obsession!

For the base of the oats (makes around 4 portions):
1 mug of rolled oats (not the instant kind)
1 mug of boiled water
Let the oats soak for 10 minutes while you prepare the other ingredients.

For the CARAMEL APPLE flavour:
1 tsp vanilla essence
1-2 tsp cinnamon
1 tsp maple syrup (or other natural sweetener)
1 tbsp unsweetened apple sauce
1 apple diced
Around 5 chopped dates
1/4 cup sliced almonds
1/4 cup almond milk
1 tbsp almond butter

Stir together well and decorate with sliced apple, almonds & more cinnamon. Bake at 180 degrees C (350 F) for around 20-30 minutes. Remove from the oven when golden on top and bubbling. Top with more nut butter and some fresh fruit - yum!

For the CHOCOLATE MACADEMIA flavour:
1 tsp vanilla essence
1-2 tsp cinnamon
1 tsp maple syrup (or other natural sweetener)
1 mashed banana
1/4 cup chocolate almond milk
1-2 tsp cocoa powder
1 tbsp cashew butter
1/2 cup chopped macademia nuts

Decorate with sultanas & cacao nibs for an antioxidant filled crunch. Bake at 180 degrees C (350 F) for around 20-30 minutes. Remove from the oven when golden on top and bubbling. Top with more nut butter and some fresh fruit - yum!

For the BERRY SEEDY flavour:
1 tsp vanilla essence
1-2 tsp cinnamon
1 tsp maple syrup (or other natural sweetener)
1 mashed banana
1 cup fresh berries
1/4 cup seeds
1/4 cup almond milk
1 tbsp almond butter

Stir well and top with sliced almonds & goji berries for some crunch. Bake at 180 degrees C (350 F) for around 20-30 minutes. Remove from the oven when golden on top and bubbling. Top with more nut butter and some fresh fruit - yum!

For the COCONUT CASHEW flavour:
1 tsp vanilla essence
1-2 tsp cinnamon
1 tsp maple syrup (or other natural sweetener)
1 tbsp unsweetened apple sauce
1/2 cup dessicated coconut
1 tbsp cashew butter (or coconut oil)
1/2 cup crushed cashew nuts
1/4 cup dried berries
1/4 cup coconut milk

Stir well and top with shredded coconut. dried berries & pomegranate seeds. Bake at 180 degrees C (350 F) for around 20-30 minutes. Remove from the oven when golden on top and bubbling. Top with more nut butter and some fresh fruit - yum!

Welcome back to the Summer Sunshine Series! Today I am sharing another healthy and tasty summer-inspired recipe. This salmon recipe is so quick and easy to make - you can even make it on the BBQ for a extra special treat!




Ingredients:
A handful of pecans
2 tbsp. maple syrup (or enough to well coat pecans)
Salmon filets

Crush your pecans to a crumbly (but not sandy) texture. Add the maple syrup and stir well. Spread the mixture on top of your salmon and bake in the oven (or BBQ) for approximately 20 minutes at 180 degrees C (or according to salmon packet instructions).




For the asparagus:
Snap of the stalky ends and spread on a baking tray. Add garlic powder, salt and pepper and drizzle with chilli oil. Bake for around 12 minutes.




For the herby potatoes: Add butter (or coconut oil) to fresh or mixed herbs and coat the new potatoes. Bake in the oven for around 20 minutes until soft in the middle and crispy on the outside.

Banana; strawberries; mixed berries; chia seeds; coconut
water (around 500ml); Greek yogurt



For the toppings:

Creamy Almond &
Honey Smoothie Bowl



For the smoothie:



Frozen banana; almond butter (around 1 heaped tbsp.); almond
milk (around 500ml); chia seeds; honey (around 2 tsp)



For the toppings:



Sliced banana; flaked almonds; almond butter; white choc
chips; swirl of honey.



This one is sweet and creamy so makes the perfect guilt free
dessert or post workout treat as it is also packed full of protein.

These salads are shown in mason jars but would be just as
perfect on a plate or in an airtight container – remember if you are using a
container to keep your dressing separate and add it just before eating to keep
your salad leaves crisp and fresh.


Tangy Greek Salad


For the minted yogurt dressing:
Natural yogurt; lemon juice; chopped mint; extra virgin
olive oil; salt & pepper






In your mason jar
layer:
Your dressing, black olives; cherry tomatoes; red onion; roasted
veg (zucchini, bell pepper, cherry tomatoes, onions); cucumber; feta &
salad leaves






Thai Chicken Salad


For the sweet and
spicy dressing:
Sweet chilli sauce; lime juice; grated ginger; extra virgin
olive oil; salt & pepper


In your mason jar
layer:
Your dressing; cherry tomatoes, cucumber, shredded carrot, red
onion, green beans, cooked chicken, salad leaves


Spicy Mexican Salad


For the dressing:
2 tbsp salsa of your choice





In your mason jar
layer:
Salsa; cherry tomatoes; cucumber; grated carrot; red onion;
jalapenos; mixed beans; Mexican cheese; cous cous; salad leaves.






Serve with a side of tortilla chips – try crumbling some on
top before serving to add crunch.

These scones are a spin on the traditional English afternoon tea treat – orange zest and juice coupled with juicy dried cranberries made these scones extra special. They are buttery, crumbly and delicious – I like them plain, as they are but you can also top them with clotted cream and jam (jelly) for the ultimate English afternoon tea experience!

Ingredients (makes 12 large scones):


300g self raising flour (or 300 g plain all purpose plus 2 tsp baking powder)
50g caster sugar
1 egg
2 tbsp milk
100g unsalted butter, cubed straight from the fridge
100d dried cranberries
Zest of 1 orange
Juice of ½ orange
Pinch salt



Combine all ingredients except for the butter and knead well. Add butter a few cubes at a time and knead until well combined. Roll out the dough and cut into circles with a cookie cutter. Brush with some milk then bake at 180 degrees C (350 F) for 12 – 15 minutes or until golden.

This peppermint cream recipe is so quick and easy with only 3 ingredients that you can whip it up in no time at all to satisfy unexpected guests! Refreshing and sweet, these make the perfect end to your meal alongside coffee or tea.

Ingredients (makes around 20 creams):

115g sweetened condensed milk
230g icing sugar/ confectioners sugar
A couple of drops of peppermint essence
50g milk chocolate (for drizzling)



Mix the condensed milk and icing sugar until stiff. Add the peppermint essence and mix until well combined. Using your hands, knead the mixture gently to ensure that the peppermint flavour is the whole way through then cut into desired shapes using a cookie cutter or break bits off and roll between your hands. Add to a lined baking sheet and put in the refrigerator for 2-3 hours to set.



Melt the chocolate in the microwave in 15 second bursts. Add a couple of drops of peppermint essence and stir well. Drizzle chocolate over the creams or dip them in to cover them entirely. Alternatively, you could decorate using edible glitter or however you wish.



These can be stored in an airtight container for up to a month.

This coconut ice recipe is so quick and easy with only 3 main ingredients that you can whip it up in no time at all to satisfy unexpected guests! Children also love it!

Ingredients (makes around 20 x 1.5cm squared cubes):

250g sweetened condensed milk
250g icing sugar
200g desiccated coconut
Pink edible food colouring



Mix the condensed milk and icing sugar until stiff. Add the coconut and mix until well combined – you may need to use your hands.


Split the mix in two and knead a drop of pink food colouring into one half. On a lined baking sheet shape the white mixture into a rectangle around half an inch thick using your hands. Add the pink mixture on top and shape into a rectangle of roughly the same size.


Put in the refrigerator for 2-3 hours to set then cut into desired shapes and serve. These can be stored in an airtight container for up to a month.

These blueberry muffins take just 2 minutes in the microwave and make the perfect quick and tasty breakfast. I popped my muffin out of my mug and into a bowl, topped it with sliced banana, 0% fat Greek yogurt and a sprinkling of chia seeds for a nutritious and delicious breakfast in an instant!

If you want to cut the calories you can skip on the sugar and use stevia/ sweetener or a mashed banana to sweeten your muffin instead.

This recipe makes two servings (or one if you have a large mug!) – if you only want one serving replace the egg with one egg white and half the other ingredient sizes.

Ingredients (makes 2 mug muffins):
¼ cup self raising flour
¼ cup rolled oats
1 egg
2 tbsp sugar
¼ cup melted butter
3 tbsp milk
½ cup blueberries
Splash vanilla essence

Combine all ingredients and split between two mugs – microwave for around 2 minutes – check after 1 minute then every 15 seconds thereafter. The top should be bouncy and no longer wet.

Whoever said you couldn't bake a cake in the microwave? Sweet perfection!

A 320g pre rolled puff pastry sheet made me 16 mini croissants – cut into less larger triangles if you want larger croissants.

Try out my 8 delicious flavour combos:
1. White chocolate, desiccated coconut & dried cranberry
2. Dried apricot & white chocolate
3. Milk chocolate & orange zest
4. After Eight (mint choc)
5. Toffee & pecan with cinnamon
6. Chilli powder & chocolate
7. Apple sauce & cinnamon
8. Freeze dried strawberries & white chocolate

How to make your croissants:
1. Roll out your puff pastry and cut into triangles
2. Add your filling to the centre of the longest side of your triangle
3. Roll away from you toward the point
4. Pinch each side well to adhere the pastry all around the filling
5. Twist each side around on itself
6. Create a little ‘crab’ shape
7. Brush with a little milk
8. Bake according to the instructions on your puff pastry packet (mine needed around 12 minutes in a 160 degree C oven).
9. Proudly serve and don’t let on that they only took you 5 minutes to prepare!

Moroccan Chicken & Apricot Tagine | Healthy, No Guilt Dinner Idea!

This Moroccan inspired dish is full of flavour but low on calories – best of all it all comes together in the slow cooker which means minimal effort for maximum results – my very favourite type of recipe!

You can add whatever veggies you like and you can skip the chicken if you are vegetarian.
If you like things spicy you can add ½ chopped chilli to this or amp up the spices. This dish is hearty, healthy and delicious – the perfect pick me up after a long day!

Weight Watchers Propoints values per serving = 8

Ingredients (serves 4):

540g chicken breast (3-4 large breasts)
½ onion, diced
75g green beans
150g diced sweet potato (yams)
75g carrots, sliced
75g butternut squash, diced
1 garlic clove, crushed
1 tsp ground coriander
1/2 tsp cumin
40g dried apricots, chopped
2 tsp tomato puree
1 tin chopped tomatoes
800ml chicken stock

Saute the onions in a pan with a splash of olive oil. When they are soft, add the garlic, cumin and coriander and heat through. Add the chicken and brown (around 5 minutes).
Transfer all ingredients into a slow cooker (or large stove top pot) and cook either on high (3-4 hours) or low (5-6 hours).

Serve with rice or potatoes or a chunk of bread for dipping.

Scottish Macaroon Bars - NO BAKE recipe!

These traditional Scottish chocolate & toasted coconut covered sweet delights are so quick and easy to make and require absolutely no baking! You would never ever guess that they are made from potatoes!

Ingredients:
4 oz potato
16 oz icing (powdered) sugar
Milk or dark chocolate (around 200g)
150g coconut

Boil the unpeeled potato in water (no salt!) and then peel and cut into cubes. Mash really well or use a food processor to get a smooth creamy consistency with no lumps. Allow to cool completely then add the sugar around half a cup at a time. Once all of the sugar is added the mixture should be very stiff. Pour the mixture onto a baking sheet lined with parchment paper and smooth out to the corners. Place in the freezer to set for at least 4 hours or overnight.

Once set, split your coconut into two and spread one half onto a baking sheet and put it into the oven to toast for about 5 minutes until golden. Melt the chocolate in the microwave in 10 second bursts (don't let it get to hot) and cut the potato mixture into squares. Dip the squares into the chocolate and then immediately into the coconut and roll until evenly covered on all sides. Transfer onto baking parchment and place in the fridge to set.

White Chocolate & Strawberry Fudge - NO BAKE recipe!

This delicious fudge looks impressive but takes minutes to
put together! You could use any dried fruit in this recipe – diced dried
apricots would be divine! Let me know in the comments below if you make this
tasty treat!
Ingredients (makes 20 – 25 generously sized fudge pieces)
400 g white chocolate
1 can sweetened condensed milk (397g)
25g butter
100g icing (confectioner’s) sugar
3g freeze dried strawberry pieces
(I found mine at Lakeland: http://www.lakeland.co.uk/19626/Lakeland-Freeze-Dried-Strawberry-Pieces)

Add the chocolate, condensed milk and butter into a microwaveable bowl and heat on 15 second bursts, stirring in between, until the chocolate is melted. Sieve in the icing (confectioner’s sugar) and whisk until everything is well combined and the mixture is smooth. Add the strawberry pieces and fold through. Spread the mixture onto a parchment-lined baking tin and sprinkle a few more strawberry pieces on top, patting them in gently. Add to the fridge for at least 2 hours before cutting into squares/ rectangles/ hearts as you
please! This decadent treat will keep stored in the fridge in an airtight container for a couple of weeks – but is unlikely to last that long!

Sticky Mango & Chicken Stir Fry – Healthy & Quick Dinner Idea

To balance the decadent Easter mug cakes that I shared with you in my last video,
this video is a super healthy, low fat dinner idea that is bright and zingy for
Spring. Full of nutritious ingredients and from ingredients to plate within 15
minutes! The stir fry is salty & sweet and satisfies those taste buds in an
instant!


The Weight Watchers UK ProPoints per serving are shown below. You can pack in as
many 0pp veggies as you like to bulk it out.


If you are on the US Weight Watchers PointsPlus programme, the points will be very
similar but I recommend that you double check against your plan to be 100%
sure.


Chicken & Mango Stir Fry                                                                      4 pp per serving
Serves 2

225g skinless, boneless chicken breasts
1 garlic clove, crushed
1 red chilli, de-seeded and chopped finely
1 Inch fresh ginger, grated (or 1 tsp ground ginger)

Around 450g stir fry veggies (I used mange tout, baby sweetcorn, carrots & green
beans)

225g mango, peeled & cubed
2 tbsp.
tomato puree

2 tbsp.light soy sauce
1 tsp.corn flour

Brown the chicken in a frying pan lightly coated with cooking spray. Add garlic,
chilli, ginger, and veggies and stir fry for a further 5 minutes. Add mango and
heat through for 2 minutes. Mix together the tomato puree, soy sauce and corn
flour and add to the pan. Cook stirring until the sauce thickens.


Herby Couscous                                                                                  6 pp per serving

60g (dry weight) Couscous per person
Half a stock cube
Salt & pepper to taste
Mint, Coriander or preferred herbs (fresh is better)
Juice of one lemon

Pour boiling water over the couscous according to packet instructions. To the water
add the stock cube, seasoning & lemon juice. Cover in cling film and leave
to absorb water.


Once ready, fluff up the grains with a fork and stir in torn mint and coriander.
This makes an excellent accompaniment to the Chicken & Mango Stir Fry
above.



 Chilli Asparagus                                                                                                                         1pp per serving
Asparagus Stalks
Tsp chilli oil (or chilli chopped finely added to olive oil)
Salt & paper
Remove the hard bottoms from the stalks and give the asparagus a good wash. Spread onto
an oven tray, drizzle with chilli oil and season well with salt and pepper. Use
your hands to roll the asparagus and ensure all stalks are evenly coated. Cook
under the grill or on the barbeque for around 10 minutes, turning frequently.

3 Easter Mug Cakes - Delicious Microwave Cake!

Cadbury Creme Egg; Mini Eggs & Caramel Egg cakes in a mug!

I am so excited to share these recipes that I said the word 'delicious' about 10 times during this video! But needless to say all 3 mug cakes are beyond scrumptious!

CADBURY CREME EGG MUG CAKE
Ingredients (makes one mug cake):
1/4 cup flour
3 tbsp brown sugar
2 tbsp unsweetened cocoa powder
Pinch salt
2 tbsp coconut/canola/mild vegetable oil
3 tbsp milk (or water)
1 Cadbury Creme Egg (or 3 mini ones)

Combine the dry ingredients well in a microwave safe mug and whisk in wet ingredients. Add your creme egg and push down well. Microwave on high for around 1 minutes - check after 30 seconds and then every 15 seconds thereafter. The cake will have a fudgey brownie texture - firm on the sides but molten in the middle. Dreamy! Decorate as you wish - I added a dollap of greek yogurt for some contrast in flavour along with a mini creme egg for garnish. ENJOY!

CARAMEL EGG MUG CAKE
Ingredients (makes 2 mug cakes):
1/4 cup melted butter (50g)
1/4 cup sugar (50g) (or 2 tbsp if you don't like things too sweet)
1/2 cup plain all purpose flour (50g)
1/2 tsp baking powder
1 egg
2 tbsp milk
Cadburys Caramel eggs (2 large or 6 mini)

Combine dry ingredients well in a bowl and whisk in wet ingredients. Split the mixture between 2 microwave safe mugs and add caramel egg(s). Microwave on full power for around 2 minutes - check after 1 minute then after every 15 seconds. The top should be bouncy and spongy. Decorate as you like - I used chcolate frosting and a mini caramel egg to garnish. ENJOY!

CADBURY MINI EGGS MUG CAKE
Ingredients (makes one mug cake):
1/4 cup + 2 tbsp plain all purpose flour
2 tbsp sugar
1/4 tsp baking powder
1/8 tsp salt
1/4 cup + 2 tbsp milk
1 tsp vanilla extract or 1/2 vanilla bean seeds
5 Cadbury mini eggs

Combine the dry ingredients well in a microwave safe mug and whisk in wet ingredients. Add mini eggs and push down into batter. Microwave on high for around 1.5 to 2 minutes. Check after 1 minute then every 15 seconds thereafter. The cake will remain moist and brownie-like and the mini eggs with be melty and delish! Decorate as you like - I used squiry cream and two mini eggs to garnish. ENJOY!

Making a headband for baby girls is so quick, easy and inexpensive that you will wonder why you ever paid retail prices again! What's more once you get the hang of it, it literally takes 2 minutes to create a new one so you will soon have a headband to match every outfit at a fraction of the shop bought cost!

Some 'standard' headband elastic lengths are provided below as a guide but you can also measure your baby's head to be sure.

Standard Elastic Headband Lengths:
Newborn 11"
0-3 months 12"
3-6 months 13"
6-12 months 14"
12-18 months 15"
18-24 months 16"

The same principles appy for adult headbands/older kids too - just make sure you do your measurements!

From 7 months you should be introducing your baby to proteins and ground turkey is a great first meat because it has a light flavour and is easy to digest. Elena has had this bolognese several times now and really enjoys it - it makes a great meal for the whole family!

Tin of chopped tomatoes
500ml water/ low salt stock
1 garlic clove
1 carrot
1 stick of celery
1 onion
Extra vegetables of your choice
Mixed herbs (optional)

Greek Style Pasta Salad - Healthy Lunch Idea

This greek style pasta salad makes the perfect healthy lunch to take to work, college or school. It's quick and easy to make, with a delicious tangy flavour.

What you will need:
Cooked cooled pasta
Black olives
Feta cheese
Cucumber
Cherry tomatoes
Greek/ natural yogurt
Mixed herbs
Lemon juice
salt & pepper

How to Make Your Own Baby Food - Baby Food Prep





Hi everyone!
In this requested video I show you just how easy it is to make your own baby food! Elena is coming up for 7 months and I started weaning her onto solid food at around 5 and a half months before I returned to work. As a busy mum, it's important that I can be organised with her food prep so I like to bulk make her baby food and freeze it in ice cube trays or little sealed tubs to be defrosted at a later date.
Why bother making your own baby food?
1. It saves you a load of cash!
2. You know what is in the food
3. Homemade food will always be fresher
4. It's much easier and less time consuming than you think!
5. It gets your baby used to what the rest of the family eats hence less fussy eaters they will be as toddlers!

In this video I make apple and pear puree and cauliflower cheese puree. Cheese can be given to your baby at 7 months (although avoid blue cheese). As Elena gets older her meals will get more exciting so don't forget to subscribe for future baby food recipes and to join us on our journey!

Delicious Cranberry & White Chocolate Cookies



In this video I am sharing with you one of my favourite recipes for delicious cranberry and white chocolate cookies! Not only do they go down a treat with everyone at any time of the year but they are also super quick and easy to make!

What you will need:
150g plain all purpose flour
1/2 tsp salt
1/2 tsp baking powder
75g rolled oats
120g softened butter
75g dark brown sugar
100g caster sugar
1 egg
1 tsp vanilla extract (or one vanilla pod)
75g dried cranberries
200g white chocolate chunks

You can also substitute dried apricots or dried cherries for the cranberries or make it a double (or triple) chocolate cookie by adding milk or dark chocolate. If you are a nut lover, those work too!

Once you make these delicious cookies once I promise you will make them again and again (probably because your friends and family will nag you for another tasty fix!)
